Nestled on the banks of Tasmania’s Derwent River, you’ll find our distillery.
Owned and operated by Emma and Robbie Gilligan, a couple with abundant experience in the Tasmanian spirits industry - who together produce award-winning small batch Derwent Distillery Single Malt Whisky and Last Sanctuary Gin.

Single malt whisky, distilled in the Scottish style, by our Head Distiller Robbie. Our small batch expressions vary from traditional to experimental; and we guarantee you’ll want a few wee drams.

Inspiration for our gins comes from the unique environment surrounding our distillery. We use Tasmanian Organic ingredients (many of them foraged on-site) and distil them in our 60 litre copper gin still.

With ingredients foraged seasonally by us, our Foragers Find Gin releases are an ode to the Tasmanian wild. To the parks, roadsides, bushlands and backyards brimming with possibilities. We like to seize possibilities, and turn them into gin.
